If you're looking for a hearty, nourishing meal to fuel you through a long day at sea, this Banana Curry is a fantastic choice. It’s a unique and comforting dish that combines the natural sweetness of ripe bananas with the rich, warming spices of curry. This easy-to-make dish is perfect for those who want to incorporate bananas into their meals beyond the typical sweet dishes.
Why It’s Great for Sailors
Bananas are already a galley staple for sailors, thanks to their natural sweetness, easy storage, and impressive nutritional benefits. But when cooked in a curry, bananas transform into a savoury, hearty dish that’s perfect for a boat meal. With potassium-packed bananas, anti-inflammatory spices, and a coconut milk base, this curry provides a warming, energy-boosting meal for any day of the week.
Ingredients:
2 ripe bananas, sliced
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
1 teaspoon ground ginger
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon garam masala
1 can coconut milk
1 tablespoon soy sauce or tamari
Salt and pepper to taste
Method:
Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
Add the minced garlic, ground ginger, turmeric, cumin, and garam masala. Cook for an additional minute until fragrant.
Stir in the sliced bananas and coconut milk, bringing the mixture to a gentle simmer.
Let the curry cook for 10-15 minutes, stirring occasionally, until the bananas soften but still hold their shape.
Season with soy sauce, salt, and pepper to taste.
Serve hot with rice or flatbread, and enjoy the warm, comforting flavours of this tropical-inspired dish.
This Banana Curry is a great way to make use of bananas in a savoury way while adding depth to your onboard meals. The combination of coconut milk and spices pairs beautifully with the sweetness of bananas, making this dish a must-try!
