Anything-Goes Plant-Based Pesto

Now that you’ve read about the wonders of olive oil in our Superfood for Sailors article here, you're likely eager to incorporate more of it into your meals. Here’s the perfect place to start—an *Anything Goes* plant-based pesto recipe! It’s incredibly versatile and a great way to use up whatever greens you’ve got onboard, from spinach to parsley, kale or even rucula All you need is a blender (essential for quick prep, trust me), olive oil, garlic, some seeds like sunflower, or pumpkin and any green leaves or herbs you have. Want that cheesy touch? Add a bit of nutritional yeast for a delicious, dairy-free Parmesan-like flavour. You’ll have a fresh, vibrant pesto in minutes, perfect for adding to pasta, drizzling over salads, or even spreading on sandwiches and wraps.


It’s quick, healthy, and a fabulous way to make your meals a little more exciting while keeping it simple on board!


Here is the magic recipe that we are sure you will love.


As the name suggests this is made with what you have on hand and exact quantities are hard to define. We have tried to give approx quantities to guide you but we also suggest you taste as you go.


Ingredients


  • 1 Bunch of parsley

  • 1 clove garlic peeled

  • 1/2 cup of olive oil

  • 1 cup of spinach, kale, arugula, cabbage or broccoli leaves or a mix of whatever you have onboard

  • 1 tbsp nutritional yeast

  • 1/2 cup of seeds (sunflower, pumpkin or a mix of whatever you have at hand) you can also use cashew nuts.

  • Squeeze of lemon juice


Instructions


  1. Mix together all the ingredients until you achieve a chunky salsa.

  2. This is truly the easiest thing to prepare on board!
